Ingredients:
1 Tbs EVOO (Extra Virgin Olive Oil)
1 tsp of Becel Margarine or Butter
½ cup quinoa
1 medium yellow onion
S n P (Salt and Peppa) to taste (not too much salt as the bouillon has a lot of salt- you can always add more but can’t take away – you do not want your soup too salty! And Pepper is bitter so I don’t add more than a pinch in this recipe.)
6 Asparagus spears finely diced
1 tsp finely diced almost minced of Red Anaheim pepper (or referred to as red jalapeno or Fresno pepper)
1 garlic glove grated or finely diced almost minced
3 large carrots diced
(organic with leaf – I believe they taste better and makes a difference folks!)
3 celery ribs diced
1 cup of finely chopped kale (smaller the better so you can sneak it in there!)
1 cup of finely chopped spinach (smaller the better so you can sneak it in there!)
2 Chicken breast diced (white meat) from 1 rotisserie chicken from the grocery store
1 Tbs finely chopped Italian flat leaf parsley (fresh herbs people – is a must!)
4 McCormick Chicken bouillon cubes (Homemade Chicken stock is the best if you have it but McCormick is the best sub for this, I have tried them all!)
8 cups of water
¾ of a package of NO YOLK egg noodles extra broad
T.L.C (tender loving care)
Recipe:
In a medium to large soup pot add your EVOO and Marg and melt/heat over medium/high heat. Add in your onion, S n P, Anaheim and quinoa, first you should hear sizzle- turn heat down to medium and sauté for 2 minutes. Add in your asparagus, carrots, celery, spinach, kale – sauté until onions are translucent about 5-7 minutes. Add in your garlic and sauté for one more minute you don’t want the garlic to burn. Add in your chicken bouillon and crumble up and stir and add in your water and bring to a boil, turn down to simmer. Add in your chicken and parsley and simmer gently for about 20 minutes or until your veggies and quinoa are cooked- I like my veggies to have a little integrity I do not like it mushy so it depends on your own taste whatever your fancy is! Then you add in your egg noodles and a pinch of S n P and keep close eye stirring occasionally. I always taste to make sure there is enough salt or flavor and sometimes I will add another half cube of bouillon depending.. Noodles you do not want to overcook, you want them to be aldente, only takes a few minutes for egg noodles.
Serve in a big soup bowl with a big hug and kiss to your loved ones!
I make this for my babies when they are sick and all the extra hidden healthy ingredients I believe help to speed up the recovery process. Any chance I can sneak these super foods into my recipes I will do it! My Fam has no idea how healthy they eat muhahahah!!!
